Ceviche With Mango
Ingredients
1 pound halibut or tilapia
1 to 2 tablespoons Amazon Green Sauce
3 tablespoons fresh lemon juice
½ cup thinly sliced onion
½ cup red bell pepper cut into thin strips
½ cup mango cut into cubes
¼ cup orange juice
1 tablespoon chopped cilantro

Makes 4 Servings
Cut fish into ½-inch cubes. In a non-metal bowl, combine orange and lemon juices, Amazon Green Sauce, and salt. Add the fish cubes and remaining ingredients and mix together. Refrigerate for 15 to 30 minutes prior to serving. Can be served with plantain chips or saltines.
