Goldenberry Chutney

Ingredients

½ large onion, finely chopped
2 cloves crushed garlic
1 tablespoon grated ginger
1 tablespoon coriander (cilantro) seeds
1 pound fresh goldenberries
1 ½ tablespoons Amazon Smoked Chipotle Sauce
2/3 cup brown sugar
¼ cup cider or fruit vinegar
½ teaspoon pepper corns
¾ cup dried goldenberries
Salt to taste

Making

Makes 1 ½ cups chutney

In a pot, sauté the onion in olive oil over medium heat for several minutes until onion is soft. Add garlic, ginger, and coriander and allow to simmer for two more minutes. Add the fresh goldenberries, Amazon Smoked Chipotle Sauce, brown sugar, vinegar, pepper corns, and salt to taste and combine well. When mixture begins to boil, turn heat to low and stir occasionally to prevent ingredients from sticking to the pan. Simmer gently for 10 minutes, then add dried goldenberries. Cook for an additional 20 to 25 minutes, or until the mixture has the consistency of marmalade. Serve the chutney as a sauce for fish, chicken, or pork. Chutney can also be spread on bread or crackers along with cream cheese or brie.
