Breaded Fish Sticks


1 ¼ pound firm white fish fillet (eg. haddock or tilapia)
3 tablespoons flour
1 egg, beaten
¾ cup crushed saltine crackers
3 tablespoons Amazon Mango Sauce
½ cup peeled tomatoes
4 tablespoons chopped red onion
1 tablespoon chopped cilantro
2 teaspoons fresh lemon juice
Salt and pepper to taste


Makes 4 Servings

Slice fish into ½-inch strips and sprinkle with salt and pepper. Coat fish strips in flour and shake off excess. Next, dip and coat strips in the beaten egg, and finally roll each strip in the saltine crumbs to coat. Place strips on a lightly greased baking sheet, making sure to leave some space between each strip. Preheat oven to 425 F and bake for 12 to 15 minutes. In a separate bowl, combine the Amazon Mango Sauce with the tomato, onion, cilantro, and lemon juice. Add salt to taste. Serve fish sticks with the mango-sauce mixture. Can also be served with french fries.
